Join us for an unforgettable series of dinners in COAST, with a very special guest chef.
Michelin-starred chef Shaun Hergatt has crafted a spectacular six-course prix-fixe menu. In an impressive celebration of spring, the journey begins with Champagne and canapés, followed by a course of “raw delicacies of the ocean” and dishes such as local striped bass, Australian lamb, and wonderful desserts.

Seatings available between 5:30 and 9:00 p.m. on the evenings of Wednesday, May 10 through Sunday, May 14 and Wednesday, May 17 through Sunday, May 21.

About Chef Shaun Hergatt
Shaun Hergatt is a classically trained chef renowned for his technically precise cooking and painterly presentations. Hergatt is inspired by childhood memories of growing up in rural Queensland, Australia, and his daily life in New York City. He developed his passion for food at a young age, experiencing flavorful dishes prepared by his Scandinavian grandmother and his father, a professional chef.
Chef Shaun Hergatt began cultivating his craft at the Ritz-Carlton in Sydney, earning the award for “Best Young Chef.” He went on to receive critical acclaim as chef de cuisine at the Ritz-Carlton in New York City and executive chef at The Setai in Miami. Hergatt later opened SHO Shaun Hergatt, which received two Michelin stars and was awarded “Best New Restaurant” by Esquire and New York magazine, and “Best New Chef” by New York magazine.
In 2013, he became the executive chef and partner of Juni, at which he earned a Michelin-star. With every inspired creation, guests will find an exceptionally cultivated perspective to his newest restaurant, Vestry.
